Denver Eats: Early Bird Restaurant

The Landmark in Greenwood Village will get a hot new breakfast and lunch spot when the Early Bird Restaurant opens at 5425 Landmark Place late this spring.

Owners Daniel and Kristen Cofrades bring more than 30 years of combined experience as professional chefs to Early Bird, a dining concept they created using local and unique ingredients to offer fresh fare at an attractive price point.

Established in Westminster in 2012, this is the second location for Early Bird, which will offer a full-service bar, private dining room and the largest outdoor patio at The Landmark covering 1,000 square feet. The 4,046-square-foot indoor space will seat 175 people.

The new location’s menu will be similar to the current Westminster Early Bird menu, which includes favorites such as Early Bird Risers (open-faced puffed omelets), biscuits and gravy, breakfast burritos and homemade gluten-free granola. The restaurant’s lunch menu will feature Early Bird Signature salads, sandwiches and stuffed waffles. Yum!

The addition of a full bar offers the opportunity for the Cofrades to create innovative cocktails with a twist, such as white peach tequila sangria for the summer months and sparkling matcha iced teas. Perfect wake up call for an early bird!
